Culinary students competed to create a maple syrup-y menu

On March 10, students in the Culinary Capstone class (CUL 290) participated in a contest to create a three-course menu with maple syrup in a “starring” role.
The competition was sponsored by Kevin Milligan, the owner of Milligan’s Maple, and a supporter of culinary scholarships for students at Cincinnati State and Columbus State.
- Students had four hours to create their menu items, with starting “mystery basket” ingredients of eggs, asparagus, pork belly, crab meat, and bananas– along with maple syrup, of course.
- Judges were Mr. Milligan and “mystery judge” Frances Kroner, a Cincinnati State graduate and the operator of Sleepy Bee Café.
John Bohls took first place in the competition and Hugh O’Neil was the runner-up.
Chef Greg Skibinski, the instructor for the Capstone class, said, “It was a learning experience for all of the Capstone students who participated, and we appreciate Mr. Milligan’s support for our Culinary students.”
Milligan’s Maple Products is a family owned and operated company founded in 2014 by Kevin and Mike Milligan. Milligan’s syrup is carefully crafted, starting on a farm outside Columbus, from maple sap to pure maple syrup with no other ingredients added.
